Science & TechFact
Stainless steel doesn't rust because it heals itself.
Steel counts as stainless once it contains at least 10.5 percent chromium. The chromium reacts with oxygen in the air to form a whisper-thin, invisible oxide layer that seals the steel beneath. Scratch it and it rebuilds itself in air. That is why you can scrub stainless pots without them rusting.
Useful: Stainless needs oxygen to heal: under stuck-on grime or salt crusts it can rust after all.
