Science & TechFact
On the hottest pan, a water drop evaporates slowest.
At 150 °C a drop hisses away instantly. From about 193 °C the opposite happens: the underside flashes into steam and the drop floats on a vapour cushion that conducts heat poorly. It skitters across the metal for seconds. Physician Johann Gottlob Leidenfrost described this in 1756. One drop survived 152 seconds at 202 °C.
Useful: When the drop dances, the pan is hot enough for a proper sear.
