Science & TechHow it works
An induction hob heats the pan, not the surface.
Beneath the glass sits a copper coil carrying alternating current at roughly 25 to 50 kilohertz. Its magnetic field induces eddy currents in the pan base, and the metal's resistance turns them into heat right inside the pan. The glass only warms up from the pan. That's why only cookware a magnet sticks to works: iron or magnetic stainless steel.
Useful: Induction delivers around 75 % of the energy into the food; a gas hob manages only about 40 %.
